meat (pork loin, hanger/skirt steak, short rib, or chicken thigh)

  1. 1 Place meet in freezer.

  1. 3 Thinly slice meat.
  2. 4 Marinate in bag at room temp for 1 2 hour or in fridge for up to 8 hours.

  1. 5 Heat until oil is shimmering.
  2. 6 Cook meat in a single layer until lightly browned (~1 minute).
  3. 7 Season with salt and pepper.
  4. 8 Toss occasionally until fully cooked and crisp at the edges (~3 minutes).
