INGREDIENT QUANTITY PROCEDURE
yeast
2 Tsp
  1. 1 Add to stand mixer, roughly in the order listed
  2. 2 Mix on low/medium for a few minutes then let sit for 10 min to allow the flour to absorb some moisture
  3. 3 Mix again for another few minutes
  4. 4 Place in greased bowl for 1 hour
  5. 5 Roll dough to 3 4 " thick on a lightly floured surface.
  6. 6 Cut to desired shapes (donuts, bomboloni, dinosaurs, christmass trees, etc).
  7. 7 Let rise until not-quite doubled in size (~40-50 minutes).
  8. 8 (optional) Refrigerate up to 3 hours before frying.
