  3. 3 Set aside half of remaining (for beans).
  4. 4 Place remaining in saucepan.

  1. 7 Add to saucepan, whole.
  2. 8 Simmer until chicken shreds easily with two forks (at least one hour).

  1. 9 Slice into 1 4 " strips and add to a skillet.
  2. 10 Add reserved chopped onion.
  3. 11 Cook over medium, until fat renders and bacon is crispy (~8-10 minutes).

  1. 12 Add to skillet, bring to a boil, and reduce slightly (~5 minutes).
  2. 13 Mash beans with a potato masher.
  3. 14 Let cool slightly.
