INGREDIENT QUANTITY PROCEDURE
whole milk
3 cups
  1. 1 Heat over medium heat until steamy (not boiling).
egg yolks

  1. 2 Beat until they turn lighter in color (a few seconds).
granulated sugar

  1. 3 Gradually add, continuously beating.
  1. 4 Whisk a few ladels of the milk mixture into the eggs, until warm.
  2. 5 Pour back into milk mixture.

  1. 7 Cook on low heat (~175°F), stirring often, until thickened (~10-15 minutes). Do not boil or simmer.
  2. 8 Strain into a bowl.

  2. 10 Place over ice water bath to cool off.
  3. 11 Mix intermittently until cold (~5-10 minutes).
