  1. 1 Soak in water just-off-boil for 5-20 minutes.

whole-milk plain yogurt

  1. 3 Whisk with half of spice mixture in second bowl.
  2. 4 Refrigerate other half.
  3. 5 Marinate paneer in yogurt mixture for 4-12 hours.

  1. 6 Preheat broiler.
  2. 7 Broil until blackened on top (10-40 minutes).

  2. 9 Add remaining spice mixture.
  3. 10 Cook, scraping often, until bottom of pot browns (~4 minutes)
