🌚 Potato leek galette 🐐

INGREDIENT QUANTITY PROCEDURE
pie dough (1 recipe of All Butter Pie Dough from Dessert Person)
350 g
  1. 1 Roll out pie dough to about 0.5" thickness
  2. 2 Transfer to a parchment lined baking sheet
  3. 3 Put in the fridge until ready to use
  4. 4 Preheat oven to 400F
leek, chopped

  1. 5 Saute, just until softened
olive oil
yukon gold potatoes

  1. 6 Slice thinly
  2. 7 Boil 3-4 min in water. You want them to be par-cooked, not fully cooked
goat cheese

  1. 8 Mix until well combined
heavy cream

Garlic, chopped
freshly ground nutmeg, to taste
salt and pepper, to taste
Chives or Dill or any herb of your choice
  1. 9 Chop
  1. 10 1egg lightly beated
  2. 11 Remove pie dough from fridge
  3. 12 Smear goat cheese mixture onto the dough, leaving a 1" border
  4. 13 Sprinkle chopped herbs
  5. 14 Add potato slices
  6. 15 Drizzle with oil and season with salt
  7. 16 Scatter cooked leeks over top
  8. 17 Fold galette edges over
  9. 18 Brush crust with egg wash
  10. 19 Bake 30-40 min, until the crust is golden
