🌚 Salted Chocolate Buckwheat Cookies 🐐

INGREDIENT QUANTITY PROCEDURE
  1. 1 Preheat oven to 350°F.
buckwheat flour

  1. 2 Sift into a bowl.
baking powder

dark chocolate

  1. 3 Melt, stirring occasionally, in a double boiler.
  2. 4 Remove from heat and let cool.
unsalted butter

  1. 5 Combine in stand mixer with whisk attachment.
  2. 6 Beat on high until mixture thickens (~5-6 minutes, until pale in color and falls from the whisk in ribbons).

  1. 7 Fold chocolate and vanilla into the egg mixture.
  1. 8 Fold in flour mixture quickly but gently, being careful not to deflate eggs.

  1. 9 Fold in.
  1. 10 Fit a pastry bag with 1 2 in plain round tip.
  2. 11 Fill with cookie batter.
  3. 12 Pipe cookies onto a parchment paper lined baking sheet, 1.5 - 2" diameter, at least an inch apart.
  4. 13 Let set at room temp for 15 minutes.
flaky sea salt
  1. 14 Sprinkle cookies.
  1. 15 Bake for 10-12 minutes.
