  1. 1 Boil in a medium saucepan over high.
  2. 2 Remove from heat and cover.
  3. 3 Let stand for 30 minutes (until chiles are soft).

  1. 5 Slice pork 1 2 " thick and place in bowl.
  2. 6 Pour purée over pork.
  3. 7 Marinate in refrigerator for 3-12 hours.
  1. 8 Smoke or grill pork until marinade has dried and begins to char and caramelize.
  2. 9 Let rest 10 minutes.
  3. 10 Slice pork against grain into 1 4 " strips.
